A drink by any other name....would still be delicious!
Called variously vpocrate, ipocras, ipocrist, hipocras, ippocras, hvpocras, and hvppocras, Hypocras, by any of its many different spellings, is a beverage made of wine and a mixture of spices. Wine, sweetener, cinnamon and ginger are necessary, but other spices and the amount used are highly variable. Early recipes are the simplest, and usually call for a mix of sugar, cinnamon, ginger, clove and grains of paradise or other pepper to be infused into the wine.
Hypocras was enjoyed as a digestive, usually drunk after dinner with wafres and sweets.
Our kit produces a lovely, sweet and spicy Hypocras, but we encourage you have a look at the period recipes provided and experiment by adding other ingredients to produce your own signature beverage!
You provide the wine, kit contains enough spices to make 1-3 bottles of Hypocras (we recommend 2)
